Job Opportunity at Château de Mercuès

We are seeking a highly skilled and experienced Sous Chef to join our team at Château de Mercuès. As a key member of our culinary team, you will be responsible for the preparation and service of our menus, working closely with our Executive Head Chef to create innovative and delicious dishes.

Key Responsibilities:
  • Prepare and cook a variety of dishes to a high standard, using fresh and seasonal ingredients.
  • Lead the kitchen team in the absence of the Executive Head Chef, ensuring smooth and efficient service.
  • Assist in the training and development of new kitchen staff, promoting a culture of excellence and teamwork.
  • Maintain high standards of food safety and health and safety, adhering to all relevant regulations and procedures.
  • Work collaboratively with the Executive Head Chef to create menus that showcase our culinary expertise and creativity.
Requirements:
  • A minimum of 5 years' experience in a similar role, preferably in a 2 AA Rosette or 1 Michelin star environment.
  • Proven ability to work under pressure, maintaining a calm and professional demeanor in a fast-paced kitchen environment.
  • Strong communication and leadership skills, with the ability to motivate and inspire a team.
  • A passion for food and cooking, with a commitment to using only the freshest and highest-quality ingredients.
