Purpose of the Role Working as part of the Development Team to manage the Menu Development process (end to end) and collation and printing of all food and beverage menus.
Key Responsibilities General:
Responsible for the menu process (end to end) for each brand including setting and managing the timelines for launching new menus:
- Management of seasonal menu changes through the creation and organisation of menu change spreadsheets (on-off)
- Creation and collation of set menus / special rotations, staff meals, beverage menus in liaison with the Development Chefs, Beverage Team and Supply chain
- Development of menus for campaigns in conjunction with the Development Chefs and Marketing Team throughout the year e.g., Valentines Day, Mothers Day, Easter etc
- Checking and updating all recipe specifications from the Development chefs and communicating to the Safety team for allergens to be added o Creation of all recipes on IT System (Comtrex)
- Responsibility for ensuring the recipe section in the companys Ivy Hub App is updated in a timely manner, as and when recipes change
- Co-ordinating all communications to restaurants in relation to recipe / menu changes
- Developing and circulating the project plan for all menu changes, printing deadlines, Head Chef training for the year ahead:
- Management of all menu printing which includes:
- Liaising with external designers and printers to ensure all work is being prioritised and deadlines are met
- Proof-reading all menus in advance of being printed
- Liaising with internal Marketing and Creative teams to ensure all menu designs are provided in timely manner
- Management of design and printing costs - to be in line with monthly budget. All costs to be tracked and approved
- Managing any queries from restaurants in relation to receipt of printed menus / collateral
- Line management duties and coaching the Menu Development Co-ordinator and Assistant
- Formulation of the weekly Menu Development update for the Executive Meeting
- Evaluating restaurant sales data and producing valuable Management Information reports in relation to dish sales, sales mix, GPs and other financials etc.
- Key Menu Development conduit between Marketing and Acton Development Team on all menu development matters
- Responsibility for menu development processes and ensuring menu printing is clearly mapped out and documented in centrally maintained files
- Continuous improvement of the menu development and printing process to deliver efficiencies
- Supporting any ad hoc Menu Development projects / requests
