Role Purpose
The primary responsibility of this position is to assist our operations by managing food costings for menu development and preparing loading charts for delivery documentation and billing processes. You will be tasked with gathering, presenting, and disseminating approved menu information while actively participating in the menu presentation process to ensure that all new menu requirements are accurately recorded.
Key Stakeholders
Internal: Operational Service Delivery team, Unit Managers, Development Chefs, Unit Production Chefs, Compliance, Finance, IT, Supply Chain, Sales, and Commercial teams.
External: Airline Clients.
Key Responsibilities:
- Timely acquisition, presentation, and distribution of all agreed menu information.
- Creation of precise cost structures for product components within airline customer menus according to specified guidelines.
- Regular updates and maintenance of all costing data, specifications, and pricing information as necessary.
- Participation in the menu presentation process, preparing pre-presentation menu costs and specifications.
- Documentation of detailed notes to capture any changes, including recipe modifications and product dish weights.
- Photography of approved meals.
- Development of loading ratio grids containing all necessary information for the preparation of base delivery notes.
- Daily support for the business utilizing airline account expertise and system reports to provide critical information such as loading charts, specifications, and recipe methodologies.
- Utilization of airline customer-specific systems to obtain and/or upload menu, loading, and pricing data as required.
- Ongoing data cleansing and management of systems.
- Assistance with the tender process as needed and support for product daily updates, along with procurement-related initiatives involving appropriate costing activities.
This list is not exhaustive; responsibilities may vary based on customer needs or role complexity and may include other reasonable duties as assigned by the line manager.
Qualifications and Skills:
- Understanding of food menu costing.
- Proficient in computer applications, particularly Excel and Word.
- Ability to adapt to various databases, including proprietary systems.
- Financial acumen and comprehension of pricing strategies, including food cost values.
- Capability to manage multiple tasks, adhere to strict timelines, and meet deadlines.
- Analytical skills with a strong attention to detail and accuracy; must approach work methodically and logically.
- Confidence to challenge data to ensure accuracy.
- Excellent communication skills.
- Strong team collaboration spirit.
- Ability to escalate issues appropriately.
- Flexibility to adjust working hours as needed, particularly during menu presentations and to meet customer deadlines.
