Role: Menu Development Specialist

As part of the dynamic Development Team, you will play a pivotal role in shaping the culinary landscape of The Ivy Collection. Your expertise in menu development and project management will be instrumental in creating innovative and enticing dining experiences for our patrons.

Key Responsibilities:
  • Menu Lifecycle Management: Oversee the entire menu development process, from concept to implementation, ensuring seamless execution across all brands within The Ivy Collection.
  • Seasonal Menu Transitions: Lead the creation and organization of comprehensive menu change spreadsheets, effectively managing seasonal updates and new offerings.
  • Menu Diversification: Collaborate with chefs, beverage specialists, and supply chain partners to develop diverse menus, including set menus, special rotations, staff meals, and beverage selections.
  • Campaign-Driven Menus: Work closely with the Marketing Team to design captivating menus for special occasions and campaigns throughout the year.
  • Recipe Management & Documentation: Ensure accuracy and consistency in recipe specifications, collaborating with chefs and communicating allergen information to relevant teams.
  • Digital Menu Maintenance: Maintain up-to-date recipes on the company's IT system (Comtrex) and ensure timely updates within the Ivy Hub App.
  • Communication & Coordination: Effectively communicate menu changes and updates to restaurants, ensuring smooth implementation and operational efficiency.
  • Project Planning & Execution: Develop comprehensive project plans for all menu changes, including printing deadlines, Head Chef training schedules, and resource allocation.
  • Menu Printing Oversight: Manage the entire menu printing process, liaising with external designers and printers to ensure timely delivery and adherence to quality standards.
  • Budget Management: Track and manage menu design and printing costs within allocated budgets.
  • Team Leadership & Development: Provide guidance and support to the Menu Development Coordinator and Assistant, fostering a collaborative and high-performing team environment.
  • Data Analysis & Reporting: Analyze restaurant sales data to generate valuable Management Information reports, providing insights into dish performance, sales mix, profitability, and other key metrics.
