Position Overview: The Executive Chef will oversee and manage all culinary operations, ensuring exceptional food quality and adherence to hygiene standards. This role involves budget management, fostering positive staff relations, and upholding all health and safety regulations set by the company.

Key Responsibilities:

  1. Collaborate closely with the General Manager to establish revenue goals and cost objectives, ensuring compliance and addressing any discrepancies.
  2. Procure ingredients within established guidelines to meet the targeted food gross profit margin.
  3. Ensure all menus are accurately costed to achieve the desired gross profit percentage.
  4. Assist with inventory assessments as necessary.
  5. Contribute to future procurement and significant renovations of kitchen facilities.
  6. Guarantee compliance with all food safety and production standards.
  7. Maintain quality control throughout the food production process, from raw ingredients to the final plated dish.
  8. Ensure proper and hygienic storage of all food items at every stage of the culinary process.
  9. Monitor portion sizes and minimize waste to positively impact gross operating profit.
  10. Work daily to maintain a clean and organized kitchen environment.
  11. Support internal catering needs by designing innovative menu options and ensuring production efficiency.
  12. Create menus that reflect customer preferences and market trends, providing high-quality offerings at competitive prices.
  13. Maintain a safe working environment at all times.
  14. Stay informed about competitors and industry developments.
  15. Continuously enhance production and presentation techniques to optimize costs and maximize guest satisfaction.
  16. Participate in training programs as directed by the General Manager.
  17. Adhere to and promote all health and safety and hygiene policies.
  18. Assist health inspectors or auditors as needed.
  19. Engage with clients for menu planning when required.
  20. Promote the resort's products and services actively.
  21. Facilitate effective communication between the kitchen and other departments.
  22. In collaboration with Human Resources, train, manage, motivate, and evaluate all kitchen staff while adhering to company policies.
  23. Schedule kitchen staff efficiently based on forecasted volumes to optimize costs and enhance customer satisfaction.
  24. Delegate daily tasks to staff to maintain operational efficiency.
  25. Implement, oversee, and document all staff training, encouraging participation in local and national competitions.
  26. Conduct regular performance reviews with team members in accordance with company standards.
  27. Track attendance and sickness for kitchen personnel.
  28. Ensure the highest hygiene standards are upheld in all kitchen areas and equipment.
  29. Assist in the procurement of food service materials and equipment to meet business demands.
  30. Ensure compliance with portion sizes and menu specifications.
  31. Minimize kitchen waste to enhance profitability.
  32. Perform any additional duties as assigned by the General Manager.

Candidate Profile:

Qualifications:

  • GCSE or equivalent.
  • Level 3 Food Safety in Catering.

Experience:

  • At least 2 years of experience as a Sous Chef in a hotel setting.

Personal Attributes:

  • Detail-oriented.
  • Self-driven.
  • Strong communication skills.
  • Customer service-oriented (both internal and external).
