Position Overview: The Culinary Operations Manager will oversee and coordinate all kitchen activities, ensuring exceptional food quality and adherence to hygiene standards.
Key Responsibilities:
- Manage kitchen costs effectively while fostering positive staff relationships and upholding all health and safety regulations.
- Collaborate closely with the General Manager on financial planning and cost management.
- Procure ingredients within established guidelines to meet budgeted food gross profit targets.
- Assist with inventory assessments as needed.
- Contribute to future procurement and significant kitchen renovations.
- Ensure compliance with all food safety and production standards.
- Maintain quality control throughout the food preparation process, from raw ingredients to the final plated dish.
- Ensure proper and sanitary storage of food items at all times.
- Monitor portion sizes and minimize waste to positively impact gross operating profit.
- Work daily to maintain a clean and organized kitchen environment.
- Support internal catering needs by designing innovative menus and ensuring production efficiency.
- Create menus that reflect customer preferences and market trends, ensuring a high-quality and cost-effective offering.
- Participate in training programs as directed by management.
- Adhere to and promote all health and safety and hygiene policies.
- Engage with clients for menu planning when necessary.
- Facilitate effective communication between the kitchen and other departments.
- In partnership with Human Resources, train, manage, and motivate kitchen staff while adhering to company policies.
- Schedule kitchen staff efficiently based on anticipated volume to optimize costs and enhance customer satisfaction.
- Implement and document all staff training, both on-the-job and off-site.
- Conduct regular performance evaluations in line with company standards.
- Track attendance and health-related absences for kitchen personnel.
- Ensure the highest hygiene standards are consistently maintained throughout the kitchen and all equipment.
- Assist in the procurement of food service materials and equipment to meet business demands.
- Strive to minimize kitchen waste to enhance profitability.
- Perform additional duties as assigned by management.
Qualifications:
- Certification in Food Safety in Catering.
- A minimum of two years of experience as a Sous Chef in a hospitality setting.
