About the Role

We are seeking a highly skilled and experienced Executive Chef Assistant to join our team at Elysium Healthcare. As a key member of our culinary team, you will be responsible for supporting the Head Chef in the day-to-day running of the kitchen, ensuring that all food is prepared and presented to the highest standards.

Key Responsibilities
  • Support the Head Chef in the planning, preparation, and cooking of meals for our service users, staff, and visitors.
  • Maintain good food storage procedures and stock rotation, adhering to established protocols.
  • Assist in the preparation, planning, and cooking of meals to a consistently high standard, taking into account any special requests or dietary requirements.
  • Support in the food service, ensuring that all meals are served promptly and efficiently.
  • Prepare and produce food for conferences and banquets, demonstrating creativity and attention to detail.
  • Participate in food costings through effective cost control procedures, ensuring that all expenses are minimized.
  • Adhere to the 'Safer Food Better Business' standards and record keeping, maintaining accurate and up-to-date records.
  • Adhere strictly to Food Hygiene Regulations and other safety procedures at all times, ensuring a safe working environment.
  • Take charge of the department in the Head Chef's absence, ensuring that service requirements are met.
  • Assist the Head Chef in researching and creating new menus, ensuring that all meals are of a high quality and meet healthy eating guidelines.
  • Correctly fill out all paperwork in relation to the Hazard Analysis and Critical Control Point system (HACCP), including fridge temperatures, food temperature logs, and cleaning schedules.
Requirements
  • Be 18 years or older.
  • Hold GCSE or equivalent in English.
  • Hold City & Guilds 706/1 and 2 (or equivalent) Basic Food Preparation Cooking.
  • Hold Basic Food Hygiene (essential).
  • Hold Intermediate Food Hygiene (desirable).
  • Have previous experience in a similar environment.
  • Have previous experience in delivering a service on a large scale.
  • Have experience in menu planning, costing, ordering, stock control, and budget management.
