Trainee Kitchen Chef - Bournemouth

Shepherd Neame is thrilled to announce an opportunity for a Trainee Kitchen Chef to become part of our culinary team.

No prior experience in the kitchen or hospitality sector is necessary; as long as you embody the qualities listed below, we can provide the training you need.

As part of the Level 2 Commis Chef apprenticeship, you will learn the essential functions across various kitchen sections through our partnership with a training provider at the Commis Chef Academy. This program allows aspiring chefs to explore, appreciate, and ultimately select a kitchen area that ignites their passion. Throughout your apprenticeship, you will participate in workshops and development days designed to enhance your knowledge, skills, and professional behavior. Additionally, apprentices will gain access to an online learning platform and portfolio system.

What will your responsibilities include?

Your primary duties will be centered in the kitchen and will encompass:

  • Food preparation tasks such as washing, cutting, and portioning as directed
  • Cooking and presenting dishes according to specifications
  • Maintaining food hygiene practices through effective food rotation
  • Preparing and cleaning kitchen equipment to meet hygiene standards
  • Ensuring the kitchen is consistently cleaned and maintained

While previous catering experience is advantageous, it is not a requirement. If you have a passion for food, confidence, motivation, and a collaborative spirit, we can equip you with the necessary skills. Our training partner, HIT Training, will guide you through your educational journey.

The Commis Chef Academy offers exciting master classes and workshops. You will be required to travel to a Training Kitchen as part of your educational experience.

Apprentices will collaborate with industry experts, exchanging ideas and enhancing their understanding of key culinary areas, including preparation, cooking techniques, flavor profiling, dish composition, and seasonality. The workshops will cover content derived from industry-recognized qualifications. Each apprentice will be assigned a coach for personalized 1-2-1 sessions at their workplace and for progress evaluations with their line manager.

What do we expect from you?

  • The apprenticeship duration is 12 months, with an additional 3 months for the End Point Assessment
  • A minimum of 6 hours per week in paid hours is required for off-the-job training (both on-site and off-site)
  • Attendance at Chef Academy training sessions approximately every four to six weeks is necessary

What opportunities await after completing the apprenticeship?

Upon successful completion of this Level 2 apprenticeship, you may have the chance to advance into a Senior Production or Chef De Partie position.
