As a participant in the Level 2 Commis Chef apprenticeship, you will engage in essential kitchen operations with guidance from our training partner at the Commis Chef Academy. This program allows you to explore various kitchen sections, helping you identify your area of passion. Throughout your apprenticeship, you will attend workshops and development sessions designed to enhance your culinary knowledge, skills, and professional behavior. You will also gain access to an online learning platform and portfolio system.

Your Responsibilities as a Trainee:

Your duties will primarily take place in the kitchen and will include:

  • Food preparation - washing, chopping, and portioning as directed
  • Cooking and presenting dishes according to specifications
  • Maintaining food hygiene practices through proper food rotation
  • Preparing and cleaning kitchen equipment to meet hygiene standards
  • Ensuring the kitchen is kept clean and organized as part of daily operations

While previous catering experience is advantageous, it is not a requirement. If you have a passion for food, are self-motivated, and work well in a team, we can provide you with the necessary training. Our training partner, HIT Training, will guide you through your educational journey.

The Commis Chef Academy program features engaging master classes and workshops. You will be required to travel to a Training Kitchen as part of your educational experience.

Apprentices will collaborate with industry professionals, exchanging ideas and enhancing their understanding of key culinary concepts such as preparation, cooking techniques, flavor profiling, dish composition, and seasonal ingredients. The workshops will cover content derived from industry-recognized qualifications. Each apprentice will be assigned a coach for personalized 1-2-1 sessions at their workplace and for progress evaluations with their line manager.

Requirements:

  • The program lasts for 12 months, with an additional 3 months for the End Point Assessment
  • A minimum of 6 hours per week in paid hours is required for off-the-job training (both on-site and off-site)
  • Attendance at Chef Academy training sessions approximately every four to six weeks is necessary

Future Opportunities:

Upon successful completion of this Level 2 apprenticeship, you may have the chance to advance into a Senior Production or Chef De Partie position.
