The Place

Set right at the heart of the Scottish Borders, our clients premises offers a great place to relax, unwind and magically shut off from the pressures of modern life. They have been welcoming guests for well over 100 years but today is home to 132 bedrooms, 3 places to eat, 6 function spaces, leisure club, spa and oodles of outdoor space.

About the role:

At our client's hotel, food quality is paramount. Understanding the importance of freshness and quality to their guests, our client meticulously incorporates top-tier local produce and seasonal ingredients into their culinary creations. This role involves working closely with the head chef to lead a team of chefs committed to preparing outstanding food for the dining room, café, and events. Your duties will include a variety of tasks, demanding flexibility to meet changing customer needs. If you excel in maintaining high culinary standards in a dynamic and fast-paced kitchen within a rapidly evolving business, this opportunity could be perfect for you.

What we are looking for from you:

As the Chef de Partie, you will inspire and oversee the commis chefs in preparing food for up to 120 guests during peak periods, as well as catering for functions of similar scale. Youll work with the Executive Head Chef in our clients main kitchens and be able to demonstrate your ability to work with high volumes and keep calm when the pressures on. With a sharp focus on quality, consistency, and portion control, you will ensure culinary excellence across all dishes. Building a strong rapport with the front of house team, you will collaborate closely to swiftly fulfil guest preferences. While a qualification in professional cookery is advantageous, relevant industry experience at the Chef de Partie level is essential. Flexibility is key, as working hours may vary to meet the dynamic needs of the business.
