As seen on BBC1 Master Chef and voted as one of London's Top 100 Restaurants ; Chef Peter Sanchez-Iglesias merges the Spanish cuisine of his family with his love of Mexico for his debut London restaurant, Decimo. Expect lots of flavour – aquachile (Mexican ceviche), suckling pig shoulder, vegan paella and a new take on tacos with a dramatically different tortilla. Situated on the 10th floor of The Standard, London, Decimo features two separate bar areas, main restaurant which showcases live fire cooking and two semi private dining spaces; with floor-to-ceiling windows and roof terraces providing dramatic views across the London skyline.

We are defined by our richness of personality, diversity of background and lifestyle and are now looking for an Assistant Restaurant GM for Decimo who will embody our ‘Anything but Standard’ ethos to work alongside our Senior GM and take on the full management responsibility for our 10th floor flagship restaurant at The Standard.

Your role

Our restaurants, bars and clubs are legendary across the world. As our  Assistant Restaurant GM for ‘Decimo’ you will oversee the entire restaurant operation and team of 40 in this busy high-volume destination restaurant, and in collaboration with our Senior GM and acclaimed chef Peter Sanchez.

You will of course be a dedicated ‘Restauranteur’ who is passionate about service, with an exceptional working knowledge of restaurant operations and the order of service; along with a deep appreciation of quality wines, cocktails and Mezcal.

Decimo operates 5 nights a week, as well as lunch Wednesday – Saturday, and regularly serves upwards of 200-300 covers on a busy night, so you will need to used to operating in a busy high-volume environment.

You’ll work closely with your team of restaurant managers to oversee service delivery across 2 bars, lounge and restaurant, and help manage service to ensure everything runs smoothly; guest tables are ‘touched’ and greeted, and dinner service transitions into late night party vibes as we evolve seamlessly into a late-night lounge with acclaimed DJs, live music and other social events, which bring the venue to life until the early hours. Decimo also hosts special event buyouts, and club and party nights, including our annual Halloween and New Years Eve parties, which transforms Decimo into a space for over 400 guests.

In addition to overseeing your team and service delivery there are a number of senior management duties you will undertake including marketing and business development, cost control and revenue generation, staff recruitment, training, scheduling, payroll and implementing Health & Safety policies and practices within the outlet.

Finally, and most importantly, you will be our principle host; so, you will need to be highly social, upbeat, and friendly; confident and can handle pressure well; thrive in a busy high-volume, high-energy environment and can manage multiple tasks and guest with ease.

Candidates with a background in Spanish or Mexican cuisine are particularly invited to apply Excellent understanding of Restaurant Operations Highly motivated and pro-active; act with professionalism and positivity in all interactions Ability to develop and deliver effective training to maintain consistent service standards throughout your team Solid wine & beverage knowledge to WSET Level 2 [knowledge of Mezcal is a plus] Good financial understanding including the management of budgets, cost control, revenue generation and P&L Have previously worked with marketing to develop a marketing plan to target and generate restaurant bookings and sales Experience with Squirrel POS, Open table and Fourth HR Candidates should hold a personal licence and ideally a food safety level 3 certificate We actively seek candidates with a diverse range of lifestyle skills and welcome applications from those in the arts, music, and entertainment industries
