Overview

At Tolly's we serve amazing Breakfast, Brunch & Lunches & we are seeking a highly skilled and experienced Head Chef to lead our culinary team. The ideal candidate will possess strong leadership qualities, extensive culinary expertise in our field, a passion for delivering exceptional dining experiences. This role involves overseeing all aspects of kitchen operations, ensuring the highest standards of food quality, safety, and presentation are maintained consistently. The Head Chef will play a pivotal role in menu development, staff supervision, and maintaining a vibrant and efficient kitchen environment.

Our opening hours are from 9am - 4pm Monday through to Sunday. Expected hours are usually within 7am - 5:00pm (exceptions made for events) at around 45 hours per week.

Service charge is circa £8,000pa

There is NO public transport that gets to Tolly's so own transport is needed. This position does NOT offer live in.

Duties

  • Lead and manage the entire kitchen team, including chefs and kitchen assistants, fostering a positive and productive working atmosphere
  • Oversee food preparation and cooking processes to ensure quality standards are met or exceeded
  • Develop innovative menus that reflect current culinary trends while catering to customer preferences
  • Supervise food production to ensure consistency in taste, presentation, and portion control
  • Maintain strict adherence to food safety regulations and hygiene standards across all kitchen operations
  • Manage stock levels, orders, and control food costs effectively
  • Train and mentor staff to enhance skills in food preparation, cooking techniques, and customer service
  • Coordinate with front-of-house teams to ensure seamless service delivery during busy periods
  • Monitor kitchen equipment maintenance and cleanliness to uphold health standards
  • Ensure compliance with all relevant health and safety legislation

Experience

  • Proven supervising experience within a professional kitchen environment, ideally as a Head Chef or Sous Chef progressing into head roles
  • Extensive culinary experience with a strong background in food production and preparation techniques
  • Demonstrable leadership skills with experience managing diverse teams in a fast-paced hospitality setting
  • Solid understanding of food safety standards and regulations within the restaurant industry
  • Previous restaurant experience with a focus on high-quality service delivery and customer satisfaction
  • Experience in menu creation, food presentation, and maintaining high standards of hospitality service
  • Knowledge of serving procedures and the ability to oversee smooth operations during service hours
