About the Role:

We are looking for a proactive and hands-on Restaurant Manager to oversee the daily operations of our poke bowl restaurant. The ideal candidate will be passionate about food, customer service, and compliance. You will be responsible for managing staff rotas, ensuring smooth day-to-day operations, maintaining high food safety standards, and preparing for council inspections. This is a customer-facing role, and you will also prepare and serve poke bowls.

Key Responsibilities:

  • Greet and serve customers with a friendly and professional attitude.
  • Prepare and assemble poke bowls according to company recipes and standards.
  • Oversee daily restaurant operations to ensure efficiency and excellent service.
  • Create and manage staff rotas to ensure appropriate coverage at all times.
  • Train, supervise, and motivate team members to maintain high performance and standards.
  • Ensure full compliance with UK Food Safety, Health and Safety, and Hygiene Regulations.
  • Keep all documentation, records, and logs up to date and ready for Environmental Health Officer (EHO) or Council visits.
  • Oversee food handling, temperature control, storage, and cleaning practices to meet legal standards.
  • Manage stock levels, order supplies, and minimise wastage.
  • Handle customer queries, complaints, and feedback effectively.
  • Ensure equipment and facilities are well maintained and in working order.
  • Perform opening and closing duties, including cash handling and daily reports.

Requirements:

  • Previous experience in a restaurant, café, or food retail environment, ideally in a supervisory or management role.
  • Strong understanding of UK food safety laws and food handling regulations.
  • Level 2 Food Hygiene Certificate required (Level 3 preferred).
  • Excellent leadership, organisational, and communication skills.
  • Experience in creating staff rotas and managing small teams.
  • Ability to multitask and work effectively under pressure.
  • Flexibility to work weekends, evenings, and busy trading periods.
  • High attention to detail and commitment to cleanliness, safety, and quality.
