We are seeking an experienced Executive Kitchen Director to lead our culinary team at Chepstow Racecourse.

About the Role

This is a key leadership position within our organization, and we are looking for someone with exceptional skills and experience in managing high-performing kitchen teams.

As Executive Kitchen Director, you will be responsible for overseeing all kitchen operations across multiple sites, ensuring the highest standards of food quality and adherence to health and safety regulations.

Key Responsibilities
  • Coordinate and supervise all kitchen operations, maintaining high food quality and adhering to hygiene regulations.
  • Control costs and maintain good staff relations, ensuring all legal and company health, safety & HACCP standards are met.
  • Manage chefs, trainees, and kitchen porters, both full-time, casual & agency.
  • Liaise closely with the Head of Catering and Events & Group Head Chef regarding revenue budgets and cost targets.
  • Ensure all menu planning and specs set by head office are correctly replicated across all areas within remit.
  • Develop and implement strategies for procuring, storing, and distributing goods or services and maintaining stock levels.
  • Collect and view the weeks function sheets for racing and non-racing and plan the kitchens time and resources.
Requirements

To be successful in this role, you will need:

  • A minimum of 5 years experience as a Head Chef in high-quality multi-site operations environment.
  • A strong understanding of food safety, HACCP, nutrition & allergens.
  • Good understanding of purchasing systems, technical packages & I.T.
  • The ability to work under pressure with strong leadership to lead the kitchen team in a professional manner.
  • Demonstrated understanding and achievements in managing and improving cost of goods.
  • A strong background in planning & control of variable Labour to budget.
  • Experience in training & team development.
  • A strong eye for detail.
  • Experience in banqueting, retail & fine dining.
  • A full & clean UK driving licence.
  • Excellent communicator.
  • Passionate about the kitchen environment and about our product.
  • Works well under pressure. Organised systematic and process driven.
Salary and Benefits

The salary for this role is estimated to be around £45,000-£60,000 per annum, depending on experience, and includes a range of benefits including a competitive pension scheme, life insurance, and opportunities for career advancement.
