About the Role

We are seeking a highly skilled and experienced Sous Chef to join our team at the Aberdeen Altens Hotel. As a key member of our kitchen brigade, you will be responsible for assisting the Head Chef in managing kitchen operations and deputising in their absence.

Key Responsibilities
  • Assist the Head Chef in managing kitchen operations and deputising in their absence.
  • Prepare and serve a range of dishes, whilst supervising junior members of the Kitchen team.
  • Assist the Head Chef to create and develop all our menus, ensuring they are creative and seasonal.
  • Manage measures to control payroll and food cost.
  • Assist with regular internal self-audit to comply with Fire, Health & safety, and Food Hygiene.
  • Assist with purchasing and stock control.
  • Assist with training and coaching the kitchen team.
Requirements
  • Previous experience in a similar role.
  • An understanding of quality control and kitchen standards.
  • The ability to manage various sections of the kitchen, whilst ensuring health & safety standards are met.
  • The ability to adhere to the company's rules and regulations on policies and procedures relating to fire, hygiene, health & safety, and licensing regulations.
  • To be flexible in your approach, and able to assist the Head Chef and any other members of the kitchen brigade when required.
