About the Role:

Sussex Inns is seeking a highly skilled and experienced Executive Culinary Director to lead our culinary team. As a key member of our management team, you will be responsible for overseeing the culinary operations of our kitchen, ensuring high standards of food quality, safety, and presentation.

Key Responsibilities:

  • Develop and implement menus that align with our concept, target audience, and seasonality.
  • Oversee food preparation, cooking, and presentation to ensure consistency and quality.
  • Recruit, train, and supervise kitchen staff, including sous chefs, line cooks, and prep cooks.
  • Develop and standardize recipes, ensuring accuracy and consistency.
  • Maintain inventory levels of food supplies, ingredients, and kitchen equipment.
  • Monitor food safety regulations, sanitation standards, and hygiene practices in the kitchen.
  • Monitor food and labor costs to meet budgetary constraints.
  • Build and maintain positive relationships with suppliers, vendors, and local producers.
  • Analyse menu performance, profitability, and customer feedback to make data-driven decisions.

Requirements:

  • Proven experience in a senior culinary role, preferably in a high-volume kitchen.
  • Strong leadership and management skills, with the ability to motivate and train staff.
  • Excellent culinary skills, with a focus on quality, presentation, and consistency.
  • Strong communication and interpersonal skills, with the ability to work effectively with suppliers, vendors, and staff.
  • Ability to work in a fast-paced environment, with a focus on efficiency and productivity.
