Executive Culinary Director

About the Role:
Sussex Inns is seeking a highly skilled and experienced Executive Culinary Director to lead our culinary team. As a key member of our management team, you will be responsible for overseeing the culinary operations of our kitchen, ensuring high standards of food quality, safety, and presentation.
Key Responsibilities:
- Develop and implement menus that align with our concept, target audience, and seasonality.
- Oversee food preparation, cooking, and presentation to ensure consistency and quality.
- Recruit, train, and supervise kitchen staff, including sous chefs, line cooks, and prep cooks.
- Develop and standardize recipes, ensuring accuracy and consistency.
- Maintain inventory levels of food supplies, ingredients, and kitchen equipment.
- Monitor food safety regulations, sanitation standards, and hygiene practices in the kitchen.
- Monitor food and labor costs to meet budgetary constraints.
- Build and maintain positive relationships with suppliers, vendors, and local producers.
- Analyse menu performance, profitability, and customer feedback to make data-driven decisions.
Requirements:
- Proven experience in a senior culinary role, preferably in a high-volume kitchen.
- Strong leadership and management skills, with the ability to motivate and train staff.
- Excellent culinary skills, with a focus on quality, presentation, and consistency.
- Strong communication and interpersonal skills, with the ability to work effectively with suppliers, vendors, and staff.
- Ability to work in a fast-paced environment, with a focus on efficiency and productivity.
