About the Role

The successful candidate will be responsible for overseeing all aspects of the catering operations at our client's visitor attraction site. This is a full-time permanent position, working 37.5 hours per week, including weekends on a rota basis.

Key Responsibilities

  • Commercial Management
    • Oversee the management of 2 catering units, ensuring cost management through payroll and margins.
    • Work closely with other teams to drive additional revenue drivers, such as parties and afternoon teas.
    • Manage suppliers to achieve best costs and product.
    • Administer tasks including invoices, health and safety, and audits.
    • Communicate key performance indicator targets to the store team and plan actions to achieve targets.
  • People Management
    • Manage a team of approximately 30 staff members.
    • Coach the team to deliver the highest standards of cleanliness.
    • Deliver ambassador customer service training.
    • Manage all aspects of staffing, including recruitment, staff scheduling, day-to-day management, holiday management, training, appraisals, and performance management.
    • Schedule staffing levels to cover staff holidays, sickness, trade conditions, and sales expectations.
  • Health and Safety
    • Adhere to and follow company health and safety policy and procedures, ensuring compliance with current legislation.
    • Maintain a 5* EHO rating and ensure records are maintained, including HACCP and allergens.
    • Ensure annual safety regulations, such as fire suppression, are in place and maintained.
    • Ensure all team members work in a safe and legal manner by carrying out relevant checks and training.
  • Customer Journey
    • Ensure the highest level of customer service.
    • Work the front of house, on the till, and be hands-on.
    • Maintain adequate stock levels through timely and effective replenishment of stock.
    • Ensure products are sold at the correct price using the correct product codes and any additional discounts or reductions.
  • Development
    • Develop new ideas to increase revenue.
    • Deliver bespoke products for corporate and head office events.
    • Deliver catering at events, such as summer fete and Christmas market.
    • Create and support menu development and product development.
    • Understand current and future trends.

Requirements

  • Previous catering management experience is essential.
  • Previous experience in a busy visitor attraction or high footfall venue.
  • Alcohol license holder.
  • A collaborative approach.
  • Great customer service skills.
  • Commercial awareness.
  • Ability to analyze, interpret, and understand data.
  • Strong planning and organizational skills.
  • L3 food hygiene certificate.
  • Chef experience is desirable.
  • Passion to drive business forward.
  • Experience of hitting budgets and bringing in new ideas.
  • Experience of developing teams and being a team player.
  • Willingness to assist in the kitchen if required.
