About the Catering Manager Role

The postholder will be responsible for overseeing all aspects of the catering operations at a high-profile visitor attraction site. This includes developing the site to its full potential, enhancing the profile of the catering, and maximizing its profitability.

Key Responsibilities

Commercial Management

  • Oversee the management of two catering units, ensuring efficient operations and cost management through payroll and margins.
  • Work closely with other teams, such as the experience team, to drive additional revenue drivers, including parties and afternoon teas.
  • Manage suppliers to secure the best costs and products.
  • Perform administrative tasks, including invoices, health and safety, and audits.
  • Communicate key performance indicator targets to the store team and plan and implement actions to achieve set targets.

People Management

  • Manage a team of approximately 30 staff members, including coaching and developing them to deliver the highest standards of cleanliness.
  • Deliver ambassador customer service training to the team.
  • Manage all aspects of staffing, including recruitment, staff scheduling, day-to-day management, holiday management, training, appraisals, and performance management.
  • Schedule appropriate staffing levels to cover staff holidays, sickness, trade conditions, and sales expectations while keeping to agreed hours.
  • Communicate changes of policy, working practices, and relevant business news to the store team when necessary.

Health and Safety

  • Adhere to and follow company health and safety policy and procedures, ensuring compliance with current legislation.
  • Maintain a 5-star EHO rating and ensure records are maintained, including HACCP and allergens.
  • Ensure annual safety regulations, such as fire suppression, are in place and maintained.
  • Ensure all team members work in a safe and legal manner by carrying out relevant checks and training as instructed by the Retail Support team and the Health and Safety Manager.

Customer Journey

  • Ensure the highest level of customer service is maintained.
  • Be able to work the front of house, on the till, and be hands-on.
  • Maintain adequate stock levels through timely and effective replenishment of stock.
  • Ensure products are sold at the correct price using the correct product codes and any additional discounts or reductions.

Development

  • Develop new ideas to increase revenue.
  • Deliver bespoke products for corporate/head office events.
  • Deliver catering at events such as summer fete and Christmas market.
  • Create and support in menu development and product development.
  • Understand current and future trends.

Requirements

  • Previous catering management experience is essential.
  • Previous experience in a busy visitor attraction/high footfall venue is required.
  • Alcohol license holder.
  • A collaborative approach.
  • Great customer service skills.
  • Commercial awareness.
  • Ability to analyze, interpret, and understand data.
  • Strong planning and organizational skills.
  • L3 food hygiene certificate.
  • Chef experience is desirable.
  • Passion to drive business forward.
  • Experience of hitting budgets and bringing in new ideas.
  • Experience of developing a team and being a team player.
  • Willingness to assist in the kitchen if required (i.e., absence), hands-on, on tills.
