About the Role

The postholder will be responsible for overseeing all aspects of the catering operations at a high-profile visitor attraction site. This is a full-time permanent position, working 37.5 hours per week, including weekends on a rota basis.

Key Responsibilities

  • Commercial Management
    • Oversee the management of two catering units, ensuring cost-effectiveness and profitability.
    • Work closely with other teams to drive additional revenue streams, such as parties and afternoon teas.
    • Manage suppliers to secure the best costs and products.
    • Handle administrative tasks, including invoices, health and safety, and audits.
    • Communicate key performance indicator targets to the store team and plan actions to achieve set targets.
  • People Management
    • Manage a team of approximately 30 staff members.
    • Coach the team to deliver the highest standards of cleanliness and customer service.
    • Deliver ambassador customer service training.
    • Manage all aspects of staffing, including recruitment, scheduling, day-to-day management, holiday management, training, appraisals, and performance management.
    • Schedule staffing levels to cover staff holidays, sickness, trade conditions, and sales expectations.
  • Health and Safety
    • Adhere to and follow company health and safety policy and procedures, ensuring compliance with current legislation.
    • Maintain a 5-star EHO rating and ensure records are kept, including HACCP and allergens.
    • Ensure annual safety regulations, such as fire suppression, are in place and maintained.
    • Ensure all team members work in a safe and legal manner by conducting relevant checks and training as instructed by the Retail Support team and the Health and Safety Manager.
  • Customer Journey
    • Ensure the highest level of customer service.
    • Be able to work the front of house, on the till, and be hands-on.
    • Maintain adequate stock levels through timely and effective replenishment of stock.
    • Ensure products are sold at the correct price using the correct product codes and any additional discounts or reductions.
  • Development
    • Develop new ideas to increase revenue.
    • Deliver bespoke products for corporate and head office events.
    • Deliver catering at events such as summer fetes and Christmas markets.
    • Create and support menu development and product development.
    • Understand current and future trends.

Requirements

  • Previous catering management experience is essential.
  • Previous experience in a busy visitor attraction or high footfall venue is required.
  • An alcohol license holder is necessary.
  • A collaborative approach is essential.
  • Great customer service skills are required.
  • Commercial awareness is necessary.
  • Ability to analyze, interpret, and understand data is required.
  • Strong planning and organizational skills are essential.
  • A Level 3 food hygiene certificate is necessary.
  • Chef experience is desirable.
  • A passion to drive business forward is required.
  • Experience of hitting budgets and bringing in new ideas is essential.
  • Experience of developing teams and being a team player is necessary.
  • Willingness to assist in the kitchen if required, being hands-on and working on tills.
