Culinary Leadership Opportunity at Cassidy's Hotel and Restaurant Six

We are seeking a highly skilled and experienced Sous Chef to join our team at Cassidy's Hotel and Restaurant Six. As a key member of our culinary team, you will play a pivotal role in ensuring the smooth operation of our kitchen, working closely with the Executive Chef to manage kitchen staff, oversee food preparation, and contribute to menu planning.

Key Responsibilities:
  • Kitchen Management: Assist the Executive Chef in day-to-day kitchen operations, ensuring high standards of food preparation, cleanliness, and staff performance.
  • Team Leadership: Supervise, train, and mentor kitchen staff, ensuring consistent execution of dishes and efficient workflow during peak hours.
  • Menu Development: Collaborate with the Executive Chef on menu creation, ensuring seasonal and fresh ingredients are used, and new dishes align with the restaurant's culinary vision.
  • Inventory and Cost Control: Oversee inventory management, monitor stock levels, and place orders with suppliers. Manage portion control, reduce food waste, and contribute to budget management.
  • Quality Assurance: Maintain high standards of food quality, presentation, and consistency in every dish that leaves the kitchen.
  • Health & Safety Compliance: Ensure the kitchen adheres to all food safety and sanitation regulations, including regular health and safety inspections.
  • Problem-Solving: Resolve kitchen issues swiftly, whether related to staff, equipment, or ingredient shortages, ensuring smooth service during busy periods.
  • Shift Management: Organize and manage kitchen shifts, creating staff schedules that optimize coverage during peak hours.
  • Collaboration: Work closely with front-of-house staff to ensure a seamless dining experience for guests, responding to any special requests or dietary needs.
Qualifications:
  • Experience: Minimum of 3-5 years of experience in a high-volume, fast-paced kitchen, with at least 1 year in a supervisory role.
  • Culinary Degree: Culinary degree or equivalent experience preferred.
  • Leadership: Proven leadership and team management skills; able to motivate and train staff effectively.
  • Culinary Skills: Expertise in various cooking techniques, recipe development, and plating.
  • Attention to Detail: Keen eye for detail in both food preparation and presentation.
  • Organizational Skills: Ability to manage multiple tasks, work under pressure, and meet deadlines.
  • Communication: Excellent interpersonal and communication skills to coordinate with staff and suppliers.
  • Adaptability: Flexible and able to thrive in a fast-paced, ever-changing kitchen environment.
