About the Role

We are seeking a highly skilled and experienced Executive Sous Chef to join our team at AC Hotel by Marriott Inverness. As a key member of our culinary team, you will be responsible for leading the kitchen team and ensuring that dishes are prepared and cooked to the highest standards.

Key Responsibilities

  • Lead the kitchen team in the absence of the Head Chef and ensure that all culinary operations run smoothly.
  • Train and develop the kitchen team to maintain high standards of quality, hygiene, and presentation.
  • Review and manage inventory, deliveries, and waste control to optimize food costs and minimize waste.
  • Monitor and control portion sizes to maintain profitability and quality.
  • Develop and implement new menu ideas and dishes, including costings and nutritional information.

Requirements

  • Minimum 2 years of experience as a Sous Chef or Executive Sous Chef in a high-volume kitchen environment.
  • Fluent in English, with any additional language skills an advantage.
  • Highly flexible and able to respond creatively to any situation.
  • Well-organized, clean, and resistant to stress.
  • Proficient in Excel, Word, and ordering platforms.
