Position Overview

We are seeking a Sous Chef to collaborate with an experienced Head Chef in a bustling kitchen environment.

The Sous Chef will play a vital role in assisting with kitchen operations, identifying training needs, and adhering to compliance protocols. They will manage kitchen activities during service, uphold quality standards, oversee inventory management, and maintain supplier relationships. Responsibilities also include reporting equipment issues and ensuring adherence to safe working practices. The Sous Chef will be accountable during external hygiene assessments and will implement any necessary improvements. They will provide structured training for kitchen staff and maintain awareness of all team roles.

Key Responsibilities – Customer Service

  • Deliver proactive and appropriate service to meet the catering department's needs and customer expectations.
  • Maintain a professional and courteous telephone manner when required.
  • Ensure respect and courtesy are upheld within the catering environment, communicating any concerns to the line manager.
  • Stay informed about promotions and activities within the venue through regular communication from management.

Key Responsibilities – Technical Skills

  • Collaborate with the Restaurant Manager in the absence of the Head Chef/Senior Sous Chef.
  • Oversee service during the absence of senior kitchen staff.
  • Assist with inventory counts and address consistency issues in food production.
  • Understand and manage ordering processes effectively.
  • Control labor costs in line with operational needs.
  • Ensure safe knife usage and handling.

Key Responsibilities – Compliance and Administration

  • Ensure proper storage and stock rotation in accordance with company policies.
  • Utilize kitchen equipment efficiently and report any faults promptly.
  • Follow safety protocols and maintain knowledge of external contractors for kitchen maintenance.
  • Secure kitchen areas and maintain cleanliness in compliance with health and safety regulations.
  • Understand and apply HACCP principles, addressing any process faults.
  • Foster positive relationships with suppliers and uphold the company's commitment to responsible gambling.

Key Responsibilities – Planning and Leadership

  • Support the Senior Chef in managing kitchen operations.
  • Supervise kitchen activities to ensure high-quality food output.
  • Communicate effectively with all kitchen staff, demonstrating strong people management skills.
  • Prepare staff schedules in the absence of senior kitchen personnel.

Key Responsibilities – Development

  • Train kitchen staff to meet the standards set by the Head Chef and company expectations.
  • Promote innovative ideas to enhance business performance.
  • Stay updated on industry trends and adapt accordingly.
  • Ensure timely completion of all assigned duties to company standards.
  • Attend industry events to remain informed about technological advancements.
  • Recognize the importance of teamwork and foster effective working relationships.
  • Maintain a flexible approach to changing departmental priorities and schedules.
  • Engage in self-assessment during performance reviews to identify development needs.
