Job Overview

Sodexo, a world-leading food and facilities management company, is seeking an experienced and innovative Retail Head Chef to join our team at American Express Stadium, home to Brighton & Hove Albion Football Club.

This is an exciting opportunity to lead the retail catering operation, managing the extensive food service, stock management, food safety, and cost of sale. You will be responsible for developing and delivering innovative and premium retail menu offers, leading and managing a retail team, and creating a positive and productive work environment.

Key Responsibilities:

  • Build a strong understanding of industry trends and seasonal offers.
  • Identify growth opportunities through innovation and new initiatives.
  • Manage commercial operations to maximize profitability and control costs.
  • Ensure effective stock management, including regular stock counts and variance analysis.
  • Review purchasing information to ensure optimal purchasing practices.
  • Monitor and review service delivery against operating procedures and best practices, driving continuous improvement.
  • Ensure health and safety is the top priority, delivering all safeguarding administration in advance of and during logistical operations.
  • Recruit, induct, motivate, manage, train, and develop all employees.

Requirements:

  • Up-to-date knowledge of culinary trends and techniques relevant to retail stadium catering.
  • Minimum of 2 years' experience in a chef role.
  • Ambitious and willing to take ownership of the operation.
  • Financially astute.
  • Team management experience.
  • Excellent culinary skills.
  • Excellent spoken and written English.
  • Strong problem-solving and organizational skills.
  • Strong leadership skills.
  • High standards of personal presentation.
  • Able to work all matchdays.
  • Flexibility to work weekends and evenings as needed.

Desirable Qualifications:

  • Street food experience.
  • CIEH Level 3 food hygiene qualification.
