Parkers Tavern is seeking to recruit a Director of Food & Beverage who is looking for a new challenge; University Arms is a 192-bedroom design-led Hotel situated in the heart of Cambridge, United Kingdom. Overlooking Parkers Piece is the Hotels quintessentially British Restaurant and Bar Parkers Tavern, Library Lounge, and beautiful 272 square metre wood panelled Ballroom.
Opened in 1834 as a Coaching Inn, University Arms is Cambridges oldest Hotel. For 180 years the Hotel was added to, updated, and modernised in the line with the age, however, it was the reopening in 2018 after a four-year £80m full renovation that really positioned the Hotel. As Director of Food & Beverage, you will be responsible for the success of the Food & Beverage operation which includes Parkers Tavern Restaurant and Bar, Conference and Events, Library, and Room Service. You will be accountable for the engagement and development of the Food and Beverage team, guest and diner reputation/engagement, and along with the Executive Chef the divisions financial success.
You will be reporting to the General Manager and will be a member of the Hotel Guidance Team.
Sets and clearly communicates the strategic direction for the Food and Beverage department in coordination with the General Manager and Executive Chef.
To ensure that Food and Beverage is adequately manned to meet diner/ guest expectations and budgeted/forecasted payroll.
To plan their rota and day around the peaks in the operation eg: large events and weddings, busy periods on the floor in the restaurant and bar
To prepare the Annual Business Plan for Food and Beverage through a structured and strategic approach, involving and guiding the Heads of Departments and other stakeholders.
Strategically analysing business performance to facilitate accurate and meaningful forecasting.
Actively participate in the weekly Food and Beverage Marketing with new ideas and opportunities that are in line with the brand, build diner/guest engagement, and generate revenue.
Regularly evaluating local, national, and international market trends, vendors, and other hotel operations to make sure that the hotels own operations remain competitive and cutting-edge.
Consistently improves the financial profitability, productivity, and efficiency of the Food and Beverage department
Prepares and monitors annual budget revenue goals and expenses for the Food and Beverage department and makes recommendations for adjustments if needed.
Ensure that the Standards and Financial practices of the Hotel are adhered to, for instance, posting accuracy, the taking of payments, end of shift, and day bankings.
Executes inventory control and calculation for monthly analysis and reconciliation with a specific focus on Beverage Cost.
Organise and conduct departmental meetings, with both the departmental leaders and the wider Food and Beverage team
This is not a 9 to 5, Monday to Friday role so working in the evening, at weekends, and on public holidays is expected.
To lead the Food, Health, and Safety Committee and ensure compliance with the Hotel's compliance partners; Having been a Director of Food and Beverage previously will be advantageous.
A post-secondary Diploma or bachelors degree in hospitality management or 5 years + of senior leadership experience in a hotel or quality restaurant. Service-oriented with an eye for detail and a driver of great diner and guest experiences.
Can identify talent, inspire leaders, and create an environment where their teams develop and grow.
Strong financial acumen skills with experience in budgeting, forecasting, payroll management, and cost control.
Innovative, creative, brave, and with the energy to have a go.
Flexible and able to embrace and respond to change effectively.
Oral and written fluency in English.
