Position Overview:

The Executive Chef (EC) will bea dynamic leader responsible for overseeing all aspects ofour kitchens operations,ensuring that our values are reflected in every facet of the business. TheECwill drive the companysvision by ensuring our kitchens teams deliverexceptional quality, maintainhighstandards, and foster a positive, team-oriented environment.

Key Responsibilities:
Menu development:

-Design and develop creative, seasonal seafood menus for both Applebees Fish and La Gamba, that highlight fresh, locally sourced ingredients and align with the Applebees Groupphilosophy.

-Collaborate with the management team to introduce new dishes and tasting menus.

-Develop and incorporate recipe cards to ensure the highest standards on preparation, portioning, efficiency and presentation are maintained throughout.

Team Leadership:

-Lead, train, and mentor kitchen management teams,fostering a positive and motivating environmentand therefore ensuring current and new staff are trained and developed to the highest standards.

Supplier relationships:

-Maintain and build relationships with local suppliers, focusing on sustainability and ethical sourcing.

-Work with suppliers to source the best quality seafood and other ingredients.

Cost control and kitchen management:

-Supervise and hold management accountable forkitchen budgetsand KPIs, including stock control, food costs, labour costs, wastage and other operational expenses.

-Ensure menu pricing reflects the market while maintaining profitability.

Manage Health & Safety:

-Ensure the kitchen complies with all health, safety, and hygiene regulations.

-Conduct regular inspections and audits to maintain high standards of cleanliness and compliance with Food Hygiene Rating Standards.

Sustainability Initiatives:

-Play an active role in promoting sustainability across all aspects of the kitchen, from waste reduction to sourcing practices.

Skills & Qualifications:

Proven experience as an Executive Chef, Head Chef, or Senior Sous Chef in a high-end seafood or fine-dining environment.

In-depth knowledge of seafood, sustainable fishing practices, and moderncooking techniques, as well as familiarity with Spanish food.

Strong leadership and team management skills, with experience in traininganddeveloping kitchen teams.

Excellent organizational and time management skills, with the ability tomanagemultiple tasks and work under pressure.

A passion for seafood and sustainability, with a creative flair for developingnew dishes.

Strong financial acumen and experience with cost control, budgeting, andsupplier management.

Up-to-date knowledge of food safety standards and health regulation.
