The role of the Director of Food & Beverage is to lead, motivate and energise the team and to be responsible for the entire operation and financial performance of the food and beverage outlets. In addition, the Director of Food & Beverage is tasked with constantly challenging the current operation and researching new opportunities to increase revenue and profitability in their business. They have overall responsibility for ensuring the unit is operated and maintained to maximise profitability while ensuring that company standards, policies and procedures are maintained.


PRINCIPLE DUTIES AND RESPONSIBILITIES

  • Sets expectations and holds food and beverage leadership team accountable for demonstrating desired service behaviors.
  • Leading Food and Beverage/Culinary Team
  • Reviews financial reports and statements to determine how Food and Beverage is performing against budget.
  • Playing a hands‐on role in the department and maintaining high visibility with colleagues and guests in all outlets.
  • Creating a high‐performance feedback culture at all levels, allowing the team to contribute to the success of the business and recognizing their individual contributions.
  • Establishes and maintains open, collaborative relationships with direct reports and entire food & beverage team. Ensures direct reports do the same for their team.
  • Training and developing Outlet/Department Managers in all aspects of management, including budgeting, forecasting, marketing/promotions, cost control, reporting and revenue generation.
  • Developing strategies with the Executive Chef in order to be continuously at the forefront within the local and regional F&B industry.
  • Analysing, reviewing and responding to F&B related Social Media and guest feedback platforms while improving and delivering the hotel service ratings goals.
  • Identifies opportunities to increase profits and create value by challenging existing processes,
  • encouraging innovation and driving necessary change.
  • Maximizing revenue for all outlets of the operation, through innovative promotional activities, focused guest research, creativity and innovation, upselling, and promotions and development of new products/services/features.
  • Ensuring food & beverage stock takes are conducted in an accurate manner and that par levels are maintained.
  • Proactively reviewing on a weekly basis, the budgeted, forecasted and actual revenues and payroll for each Outlet in order to achieve the yearly budget.
  • Utilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example.
  • Ensuring that all departmental SOPs, service guides and hotel policies and procedures are reviewed annually in order to achieve service goals.
  • Monitor the quality of food, beverage and service to make sure they are in accordance with established standards
  • Ensure full compliance with Food Hygiene, Health and Safety, and Licensing
  • Manage financial control and stock security
  • Liaise with the sales and marketing team to drive and manage marketing, promotions and events
  • Build up relationships with local business and any potential customers
  • Stays aware of market trends and introduces new food and beverage products to meet or exceed customer expectations, generate increased revenue and ensure a competitive position in the market.
  • Ensuring Exceptional Guest Service
  • Regularly move throughout the departments to visually monitor all elements (lighting, music, temperature), business levels, staffing levels, steps of service, timing of service, hotel cleanliness and take steps to ensure quality and presentations are always met.
  • Review monthly P&L’s with the Exec Team and Departmental Managers and assist with monthly
  • forecasting.
  • Ability to assume the responsibilities of the Hotel Manager in his/her absence.
  • Perform special projects and other responsibilities as assigned.
  • Participate in task forces and committees as requested.
  • Professionally represent the hotel in community and industry organizations and events.
  • Control all capital expenditures and ensures the proper guidelines are adhered to and projects are completed on a timely basis.
  • Meet with the Director of People Operations on a regular basis to review staffing requests, morale, disciplinary situations, and Rooms employees. Able to aid in the development of existing personnel and assist in the recruitment of new employees.
  • Attend functions, social and/or business, to help develop a rapport and to establish credibility within the local community.
  • Respond appropriately in the event of any hotel emergency or safety situation and align with all local codes and ordinances with a focus on guest and employee safety.
