Food and Beverage Cost Controller

The Marcliffe Hotel & Spa, one of Scotland's finest luxury and elegant five-star Scottish Country retreats, is seeking a dedicated and detail-oriented Food and Beverage Cost Controller to join our team on a part-time basis.

**About the role**

As Food and Beverage Cost Controller you'll play a vital role in helping us maintain financial efficiency, optimise profitability, while ensuring our food and beverage operation maintains the highest standards. You'll work closely across all key departments, particularly with Executive Chef/Head Chefs, Food ad Beverage Managers across Restaurant, Bar and Conference & Events, and our finance team.

This is a key role in an exciting time of change and investment, suitable for an individual with a finance background, with a passion for hospitality and food & beverage, wishing to develop their career at an exceptional property.

**What you'll do**:
Using our **recipe for success**’ ingredients of empowering our people, excellence in service, strengthening infrastructure and optimising operations, you will:

- Monitor food and beverage costs, ensuring alignment with our budget and financial goals
- Prepare detailed cost reports, identify discrepancies, monitor impact of menu changes, and collaborate with the team to set fair and profitable pricing strategies
- Oversee our food and beverage inventory, ensuring everything is in stock, performing regular stock checks to ensure we operate at optimal levels
- Implement smart inventory control measures and systems to minimise waste and ensure efficiency
- Assist in the purchasing process, building strong relationships with suppliers, to secure best prices and high quality stock
- Prepare clear, insightful financial reports, analyse variances, and work with exec team to forecast and plan budgets for our food and beverage operations
- Take ownership of keeping data and systems up to date and accurate
- Be involved in procurement system implementation project.
- Actively support and contribute to the wider hotel team as required.
- Represent, promote and maintain a professional, positive attitude and image for the Marcliffe at all times

**About you**
- Previous experience in a food and beverage cost controller role is preferred, ideally within the hotel industry
- Strong knowledge of food and beverage cost structures, pricing, and inventory control systems
- Excellent analytical and problem-solving skills, with a keen eye for detail
- Proficiency in financial software and Microsoft Excel; experience with hotel management and/or procurement systems is a plus
- Strong communication and negotiation skills, with the ability to build relationships across departments and with suppliers
- A positive attitude, a love of problem-solving and a proactive approach to cost control
- Ability to work in a fast-paced environment while keeping things organised and under control
