Role Overview

The Food & Beverage Manager is responsible for overseeing all food and beverage operations across the hotel, including the restaurant, bar, lounges, weddings, events, and banqueting facilities. The role is both strategic and hands-on, ensuring high service standards, profitable operation, and consistently excellent guest experiences.

Key Responsibilities

· Recruit, Lead, manage and develop the F&B team to deliver outstanding service in line with hotel standards.

· Drive sales and profitability across the restaurant, lounge, bar, weddings, conferences, and events.

· Manage F&B budgets, forecasting, and cost control including labour, beverage, and food costs.

· Oversee rota planning and resource allocation to ensure efficient and effective operation.

· Create and maintain strong working relationships with the Kitchen team to ensure seamless service.

· Support weddings and events, ensuring smooth coordination between F&B, events, and operational teams.

· Maintain compliance with all food safety, licensing, and health & safety regulations.

· Develop and deliver training, motivating the team to meet performance and service targets.

· Contribute to marketing initiatives, promotions, and menu development in collaboration with wider teams.

· Ensure guest feedback is actively sought and used for continuous improvement.

Skills & Experience

· Proven experience in Food & Beverage Management within a quality hotel or hospitality environment.

· Strong background in weddings, events, and banqueting operations.

· Excellent leadership skills with the ability to inspire, motivate, and develop teams.

· Commercial acumen with experience monitoring budgets, driving sales, and controlling costs.

· Ability to work under pressure while maintaining service excellence and attention to detail.

· Strong organisational and communication skills.

· Knowledge of UK food safety and licensing compliance.
