Petersham Nurseries Richmond is seeking a skilled Baker to join their team.

The ideal candidate will be a vital part of the Kitchen team, responsible for running the day-to-day operation of the Tea House Cakes and assisting with the Restaurant Pastry and Afternoon Tea sections. This will involve a combination of both Pastry and Baker duties, supporting the Sous Chef with basic management tasks.

Key Responsibilities:

  • Championing and celebrating seasonality of produce.
  • Understanding sustainability issues that relate to the kitchen and ensuring they are incorporated into daily routines.
  • Working closely with the family farm to utilize farm-to-plate and nose-to-tail philosophy to its full potential.
  • Eradicating the use of single-use plastic within the kitchens.
  • Minimizing food waste by preserving, composting, repurposing, staff food, and donating to community charities.
  • Developing new seasonal cakes for Petersham Nurseries Cafe, Afternoon Tea, and the Teahouse cake menu that reflects Petersham Nurseries brand, style, and ethos.
  • Ensuring correct recipes are followed, and specification, quality, and presentation standards are met.
  • Maintaining and updating the recipe books with images for the station.

Requirements:

  • Responsible for the operation and organization of the baking section of the kitchen.
  • Planning and managing the workload throughout the day, week, and month.
  • Forecasting and setting daily, weekly, and monthly production levels.
  • Planning, forecasting, and recording of stock and orders.
  • Ensuring all administration for the section is completed according to deadlines.
  • Ensuring Food Safety standards are adhered to by enforcing the high standard of hygiene and sanitation in all food-related outlets.

Working Conditions:

  • This is a physical role that will involve heavy lifting, dealing with machinery, and standing for long periods of time.
  • Exposure to hazardous chemicals and working in extreme temperatures.
