About the Role

Xpress Recruitment is seeking an experienced Sous Chef to join our client's independent hotel in Scotland. As a key member of the kitchen team, you will work closely with the Head Chef to develop and implement a varied food offering that showcases the hotel's culinary expertise.

Key Responsibilities:

  • Support the Head Chef in overseeing the kitchen team, ensuring high standards of food quality, presentation, and cleanliness.
  • Assist in menu planning, development, and implementation, including suggesting new dishes and contributing to menu ideas.
  • Work closely with the Chef de Partie's, Commis, and Kitchen Porters to ensure seamless kitchen operations.
  • Maintain strict adherence to HACCP principles, including fridge management, date labeling, and effective vacuum packing and blast chilling.
  • Contribute to the development of a positive and productive kitchen culture.

Requirements:

  • Proven experience as a Sous Chef in a hotel or similar environment.
  • Ability to work effectively in a fast-paced kitchen environment.
  • Strong communication and leadership skills.
  • Passion for using high-quality produce and preparing dishes that exceed guest expectations.
  • Flexibility to work a variety of shifts, including weekends and nights.
