About the Role:

Xpress Recruitment is seeking an experienced Sous Chef to join our client's team in a prestigious independent hotel in Scotland. As a key member of the kitchen team, you will work closely with the Head Chef to reposition the hotel's food offering and create a unique dining experience for guests.

Key Responsibilities:

  • Support the Head Chef in overseeing the kitchen team, including Chef de Partie's, Commis, and Kitchen Porters.
  • Ensure high standards of food quality, presentation, and cleanliness are maintained at all times.
  • Contribute to menu planning and development, suggesting new and exciting dishes to enhance the hotel's food offering.
  • Work collaboratively with the kitchen team to deliver A la carte and function menu food, ensuring seamless service and high guest satisfaction.
  • Assist in managing kitchen operations, including inventory management, stock control, and HACCP compliance.

Requirements:

  • Proven experience as a Sous Chef in a hotel or similar environment.
  • Strong leadership and communication skills, with the ability to motivate and guide the kitchen team.
  • Excellent culinary skills, with a passion for using high-quality ingredients and creating innovative dishes.
  • Ability to work flexibly, including weekends and nights, to meet the demands of the hotel's food service.
  • Strong knowledge of kitchen operations, including HACCP principles and food safety protocols.
