Larder Chef plays a pivotal role within the culinary team, directly reporting to the Executive Chef. This position entails overseeing the daily operations of the kitchen staff, ensuring a seamless flow of food preparation and service. It is a dynamic role that allows for hands-on involvement in all aspects of culinary creation, while also providing opportunities to mentor and guide a passionate team.
- Engage in the meticulous preparation of food items in accordance with guest orders, ensuring consistent quality by adhering to established recipe cards and production standards.
- Lead, inspire, and supervise kitchen personnel, ensuring compliance with both cultural and core operational standards.
- Effectively operate, maintain, and clean a variety of kitchen equipment, including fryers, broilers, stoves, steamers, food processors, mixers, slicers, ovens, and grills.
- Ensure proper labeling and rotation of food containers, maintaining adherence to food safety policies; monitor inventory for shift requirements, and manage preparation and storage of food items.
Qualifications
- NVQ Level 3 in Catering or an equivalent qualification.
- Advanced culinary expertise is essential for this role.
- Demonstrated supervisory experience is required.
- Proficient in the operation and maintenance of kitchen equipment, with strong knife skills and the ability to manage multiple tasks simultaneously.
