About the Role

We are seeking a highly skilled and experienced Executive Chef to join our team at Apex Hotels Ltd. As a key member of our culinary team, you will play a vital role in delivering exceptional dining experiences for our guests.

Main Responsibilities
  • Food Cost Management: Assist in the management of all food and sundry costs through rigorous stock control measures, ensuring optimal performance and minimizing overspend.
  • Profit and Loss Analysis: Analyze and present monthly profit and loss commentaries, identifying areas for improvement and implementing corrective actions as directed by the Head Chef.
  • Payroll and Food Cost Analysis: Assist with daily and weekly payroll and food cost analysis, ensuring alignment with forecasted and actual revenue levels.
  • Culinary Process Improvement: Conduct time-in-motion studies across all kitchen functions, identifying opportunities for efficiency gains and implementing process improvements.
  • Strategic Planning: Assist the Head Chef in developing a multi-skilled culinary team that delivers payroll flexibility and supports the achievement of departmental scorecard targets.
  • Culinary Leadership: Maintain a high level of visibility during key service periods, focusing on attention to detail and culinary delivery excellence.
  • Team Development: Assist in building and developing a guest-centric team culture, promoting a positive and inclusive work environment.

  • Excellent Communication Skills: Clear and influencing communicator with the ability to interact effectively across all levels.
  • Sales and Profit Focus: Possess a sales and profit-driven mentality, with a strong understanding of the importance of cost control and revenue growth.
  • Culinary Expertise: Food Safety Management and Professional Cookery qualification at level 2 or above, with a strong understanding of culinary best practices.
  • Leadership and Coaching: Ability to coach, support, and challenge team members to achieve operational results and promote a culture of excellence.
