Job Title: Executive Chef - Chinese Cuisine

We are seeking an experienced Executive Chef to lead our Chinese production kitchen and support our Executive Chefs in our unit. The ideal candidate will have a good knowledge of specific ingredients, cooking methods, and the ability to motivate a team.

Key Responsibilities:

  • Supervise the Chinese production kitchen and support the Executive Chefs in our unit.
  • Work closely with the Executive Chef team to ensure consistent quality products in the Chinese kitchen are produced following all DO & CO requirements.
  • Manage and support the Chinese Kitchen team on a day-to-day basis.
  • Maintain high quality standards in staff performance, Chinese food production, and presentation service procedures.
  • Ensure all kitchen appliances are kept clean and well-maintained and report any issues to the Head Chef.
  • Plan production to the daily schedule and ensure exceptional quality is maintained at its highest level with maximum efficiency in accordance with DO & CO regulations as set by the Quality Assurance team.
  • Ensure operations adhere to all SOP's and all relevant Critical Control Points, Health and Safety, Food safety, and all legal requirements.
  • Perform quality control checks to ensure specifications are met on raw materials and finished products.
  • Ensure the correct cleaning and sanitizing chemicals are used in compliance with EHO standards in the kitchen and take corrective action as required.

Requirements:

  • Possess a passion for cooking authentic Chinese food.
  • Have extensive knowledge of Chinese Cuisine.
  • Be passionate about food and working with fresh and high-quality ingredients.
  • Be able to work in a fast-paced environment and handle multiple orders simultaneously.
  • Have strong attention to detail and the ability to maintain consistency in food quality.
  • Have excellent knife skills and the ability to handle raw fish safely.
  • Have knowledge of food safety and sanitation regulations.
  • Have strong communication and teamwork skills.
  • Hold the right to work in the UK.
