About the Role:

Rhubarb Hospitality Recruitment is seeking a highly skilled and experienced Executive Pastry Chef to join our team at a prestigious modern French European Brasserie in Central London.

About the Restaurant:

This upscale restaurant is known for its all-day dining, hyper-seasonal menus, and modern plating in an elegant and intimate dining room setting. The pastry department is a key component of the restaurant's success, and we are looking for a talented Executive Pastry Chef to lead the team.

Responsibilities:

  • Manage a team of up to 8 pastry chefs, ensuring high-quality desserts are prepared and presented to the highest standards.
  • Develop and implement new dessert menus, taking into account seasonal ingredients and trends.
  • Collaborate with the front-of-house team to ensure seamless service and presentation of desserts.
  • Maintain a clean and organized pastry kitchen, adhering to health and safety standards.
  • Work closely with the Pastry Sous Chef to ensure smooth day-to-day operations.

Requirements:

  • Proven experience as a Senior Pastry Chef or Pastry Sous Chef in a premium quality pastry kitchen, 5* hotel, restaurant, or patisserie.
  • Formal training in classic French patisserie and ability to confidently manage a team.
  • Excellent leadership and communication skills, with the ability to motivate and train staff.
  • Strong attention to detail and ability to maintain high standards in a fast-paced environment.
