We are seeking a highly skilled and experienced Head Pastry Chef to join our team at First Call Contract Services in London.


Job Summary:

£50,000 - £53,000 dependent on experience

Permanent Contract

Key Responsibilities:

Oversee the preparation, baking, and finishing of all pastries, baked goods, and other specified products in accordance with our quality standards and specifications.

Maintain high standards of organisation and ensure total compliance with cleanliness and sanitation standards in work areas and equipment.


Key Duties:

Comply with and fully understand laws and regulations regarding licensing, food safety, health and safety, fire equipment, and fire training.

Maintain complete knowledge of and comply with all policies and procedures as the Company may put in place from time to time.

Liaise with the Head Baker or Assistant to understand assignments, anticipate business levels, changes in the menu, and other information pertinent to job requirements.

Complete all opening duties, including setting up workstations with regard to mise en place, tools, equipment, and supplies according to standards.

Inspect the cleanliness and working condition of all tools, equipment, and supplies, ensuring that everything complies with standards.

Establish priority items for the day and organise and check production schedules.

Daily order all ingredients for production and inform the Assistant and Production Manager of any supplies needed for the day's tasks.

Ensure that all perishable items are stored quickly and efficiently, avoiding unnecessary quantities being held within the pastry areas, and ensuring complete utilisation of all items with minimal wastage.

Create, prepare, produce, and bake pastries, baked goods, and other specified products for the bakeries and wholesale customers following recipes and yield guides according to department standards.

Create new recipes with the team and in conjunction with the Production Manager and CEO.

Enforce high standards of hygiene and sanitation.

Adhere to strict policies regarding personal grooming and hygiene.

Ensure that all areas are fully cleaned down at the end of the working day.

Label, date, and rotate items stored in all products and ingredients.

Test and train new pastry team members to the company's standards.

All tasks will be conducted under the supervision of the Company Production Manager, to whom the Head Baker will directly report.
