Key Responsibilities

Sodexo Live is seeking a highly skilled Sous Chef to join our esteemed culinary team at Ascot Racecourse. As a key member of our team, you will assist the Head Chefs in delivering exceptional culinary experiences to our guests.

Key responsibilities include:

  • Developing and delivering projects to enhance our fine dining experience
  • Ensuring consistency in event delivery through photography and specification of tasting dishes
  • Participating in menu design and driving innovation to achieve positive PR, client feedback, and revenue growth
  • Articulating service offers for each event, including food, equipment, flow, and customer experience
  • Costing menus and working within financial parameters
  • Supporting client tastings and speaking passionately about each dish
  • Managing kitchen operations and working with the Head Chefs and team to deliver all aspects of our business
  • Ensuring food is prepared with due care and attention, particularly for customers' special dietary requirements and allergen legislation
  • Following Sodexo Live and Ascot waste streaming and recycling policies and objectives
  • Managing the ordering process to meet specifications, budget, and minimize wastage
  • Supporting event managers and building positive relationships within the business
Requirements

We are looking for an exceptional Sous Chef with extensive menu development expertise and previous experience in large and fine dining establishments. Key requirements include:

  • NVQ 2 or equivalent in food production
  • Level 3 Food Safety in Catering
  • Excellent communication and presentation skills
  • Financial awareness and understanding of food profit and loss accounts
  • Excellent organizational and planning skills
  • Experience in using Microsoft Word, Excel, PowerPoint, and Email
