Role Overview:

We are seeking a talented Junior Sous Chef to enhance our Pastry Kitchen. The primary responsibilities of this role include:

  • Assisting the Head Chef and Sous Chef - Pastry in organizing and managing daily pastry kitchen operations to uphold the high standards expected in a luxury hotel.
  • Supervising and mentoring pastry team members, ensuring compliance with recipes, techniques, and presentation standards.
  • Contributing to the creation and innovation of pastry menus, which include desserts, breads, pastries, and confections that highlight seasonal ingredients and culinary trends.
  • Overseeing the preparation and production of pastry items, ensuring consistency, quality, and timely service for all dining outlets, banquets, and special events.
  • Monitoring inventory levels of pastry ingredients and supplies, working closely with the procurement team to maintain adequate stock while minimizing waste and managing costs.
  • Ensuring a clean, organized, and sanitary pastry kitchen environment, adhering to health and safety regulations and implementing proper sanitation practices.
  • Assisting in scheduling pastry team members and managing labor costs to maintain optimal staffing levels while ensuring productivity and efficiency.
  • Collaborating with other kitchen departments, such as the main kitchen and banquet kitchen, to coordinate production schedules and ensure a seamless workflow.
  • Assisting in the development and implementation of standard operating procedures and production guidelines to enhance processes and improve consistency.

Candidate Profile:

The ideal candidate will possess the following qualifications and experience:

  • In-depth knowledge of pastry ingredients, techniques, and equipment, with the capability to produce a wide variety of pastry items, including desserts, breads, and pastries.
  • Demonstrated leadership and supervisory skills, with experience in training, mentoring, and motivating pastry team members to achieve high performance and service standards.
  • Understanding of health and safety regulations and sanitation standards in a kitchen environment, with a strong commitment to maintaining cleanliness and hygiene.
  • A creative passion for pastry, evidenced by a portfolio of innovative and visually appealing pastry creations, along with a willingness to contribute to menu development and culinary creativity.
  • Experience in a fast-paced kitchen environment, with the ability to multitask, prioritize responsibilities, and maintain composure under pressure to meet deadlines.
  • Familiarity with pastry costing, portion control, and inventory management practices to support efficient operations and maximize profitability.
  • Excellent communication and teamwork skills, with the ability to collaborate effectively with other kitchen departments and convey instructions clearly to pastry team members.
