About the Role

We are seeking a highly skilled and experienced Senior Sous Chef to join our culinary team at Marine North Berwick. As a key member of our kitchen team, you will be responsible for maintaining the highest standards of quality and consistency in our food preparation and presentation.

Key Responsibilities

  • Assist the Head Chef in the planning and preparation of menus, ensuring that all dishes meet the highest standards of quality and presentation.
  • Supervise and coordinate the work of the Commis Chefs, providing guidance and support as needed to ensure that all kitchen tasks are completed efficiently and effectively.
  • Take responsibility for the maintenance of kitchen equipment and supplies, ensuring that all areas of the kitchen are clean and well-organized.
  • Work closely with the Head Chef to develop and implement new recipes and menu ideas, ensuring that they are aligned with the company's culinary vision and values.
  • Contribute to the development and implementation of kitchen policies and procedures, ensuring that they are aligned with company standards and regulatory requirements.

Requirements

  • 2+ years of experience as a Commis Chef or higher, with a proven track record of success in a similar role.
  • A basic understanding and commitment to learn classic cookery and seasonal British ingredients.
  • Good, demonstrable knife skills and a thorough understanding of kitchen etiquette and practice.
  • Level 2 food safety certification and a strong commitment to maintaining the highest standards of food safety and hygiene.
