Senior Sous Chef Job Description

We are seeking a highly skilled and experienced Senior Sous Chef to join our team at a prestigious hotel in Kent. As a Senior Sous Chef, you will play a key role in managing the day-to-day kitchen operation, ensuring that food is produced to the highest standard and served to our guests with excellence.

Key Responsibilities:
  • Assist the Head Chef in managing a team of 12 Chefs and 4 Kitchen Porters, providing guidance, support, and training to ensure the highest standards of food production and service.
  • Develop and implement menu planning, supplier resourcing, ordering, delivery, storage, preparation, cooking, and service across the range of food areas within the hotel.
  • Ensure effective people management of the kitchen team, including performance management, scheduling, and motivating/coaching team members to achieve rosette standards.
  • Develop menu ideas to progress the food offering and achieve rosette standards across all areas of service.
  • Oversee the presentation of all food leaving the kitchen to rosette standards.
  • Ensure compliance with HACCP and food hygiene, health, and safety legislation.
  • Achieve gross profit targets on dishes to allow for future investment in the facilities and staffing.
Requirements:
  • Senior chef experience within a quality hotel restaurant to rosette standards.
  • Demonstrate practical ability and flair during a cooking trial to drive and motivate others on the team to achieve.
  • Hold experience to manage the multi-menu requirements and busy banqueting operation.
  • Live locally or have the ability to relocate to the area with own transportation.
What We Offer:

A competitive salary of £39,500 + in the region of £1,500 per annum service charge payment paid monthly, a 48-hour week, and a range of company benefits. Transport may be beneficial due to the shifts.
