Job Summary:

The Peninsula London is seeking an exceptional Chef de Cuisine to lead our Culinary Team in the Lobby Restaurant. As a key member of our team, you will be responsible for providing a high-quality menu in partnership with exceptional service standards.

About the Role:

  • Lead and coach a team of 15+ chefs across a busy breakfast, lunch, afternoon tea, and dinner service.
  • Maintain communication across all sections of the kitchen and with other departments.
  • Assist the Executive Chef in menu development and ensure high-quality produce is procured.
  • Manage and follow control cost control policies and procedures.
  • Maintain the highest level of health and safety and environmental hygiene.
  • Hire, develop, motivate, supervise, and coach department employees.

Requirements:

  • Minimum 6 years in a similar role in a luxury hotel or fine dining restaurant establishment.
  • Naturally organized and creative.
  • Strong people leader with prior experience managing diverse teams.
  • Fluent English language skills and presentation ability.
  • Self-starter with extensive culinary knowledge in both classical and current culinary trends, and financial acumen (budgeting).
