Position: Assistant Culinary Leader

  • Department: Kitchen
  • Reporting to: Chef Patron, Head Chef
  • Key Relationships: Operations, Restaurants, Department Heads, Suppliers, Support Functions

Overall Objectives

Oversee, prepare, and deliver high-quality service in all areas of food production for menu items and specials, adhering to established standards and presentation guidelines. Supervise, train, and evaluate the performance of kitchen staff. Ensure the organization, cleanliness, and sanitation of workspaces and equipment.

Key Responsibilities

  1. Compliance: Understand and adhere to laws and regulations regarding licensing, food safety, health and safety, fire equipment, fire training, and allergens.
  2. Quality Control: Manage service, taste, and verify all items presented to ensure they meet the menu standards, sending only food that meets these criteria.
  3. Menu Development: Innovate the menu in alignment with seasonal ingredients and current culinary trends to showcase the finest produce available.
  4. Supplier Liaison: Communicate with suppliers to ensure timely reordering of stock items at optimal prices.
  5. Equipment Maintenance: Maintain comprehensive knowledge of proper equipment use and maintenance; utilize tools and equipment safely and as intended.
  6. Team Coordination: Collaborate with fellow Assistant Culinary Leaders to discuss schedules, assignments, anticipated business levels, and other relevant information.
  7. Staff Management: Ensure that team members arrive as scheduled, in appropriate uniforms, and uphold company standards, documenting any tardiness or absences.
  8. Training and Development: Mentor and train junior kitchen personnel, fostering a collaborative and supportive workplace.
  9. Cost Control: Monitor food costs to remain within company guidelines and minimize waste to achieve projected food cost goals.
  10. Inventory and Ordering: Assist with scheduled inventories, ensuring adherence to stock control levels, including ordering and receiving supplies.
