Job Title: Events Sous Chef

We are seeking a highly skilled and experienced Events Sous Chef to join our team at 116 Pall Mall. As a key member of our kitchen brigade, you will be responsible for overseeing the daily kitchen activities, including staffing and menu preparation.

The successful candidate will have a strong foundation in culinary arts, with at least 2 years of experience in production or event work. You will be responsible for developing and improving menus, ensuring high-quality catering services, and managing food production and storage.

As an Events Sous Chef, you will be part of a dynamic team that values individuality and diversity. You will have the opportunity to work in a stunning Georgian building in the heart of London, with access to versatile and flexible spaces for corporate occasions, private events, and weddings.

Key Responsibilities:
  • Oversee and assist in the preparation and presentation of all meals and services across the Hall, Events, and Restaurant.
  • Lead and drive the brigade team in the planning and development of menus, dishes, and concepts.
  • Create new menu specifications, including costing sheets.
  • Provide guidance to junior chefs and porters.
  • Manage food production and ordering.
  • Control food storage areas and maintain high standards.
  • Record food production volumes, waste, stock holding, and food costs concerns.
Requirements:
  • Formal culinary training with at least 2 years of experience in production or event work.
  • Good foundation of Health and Safety, Food Safety, and COSHH.
  • Strong organisational and management skills.
  • Highly developed attention to detail.
  • Ability to work under pressure.
