Raffles London at The OWO is a luxurious hotel located in the heart of London, offering an unparalleled level of service and amenities. Our hotel is a Grade II* listed Edwardian building that has been transformed into a stunning destination with 120 rooms and suites, as well as a collection of 85 exceptional branded residences.

About the Role

We are seeking an exceptional Pastry Commis Chef to join our Food & Beverage Department at Raffles London at The OWO. As a Pastry Commis Chef, you will support our Executive Pastry Chef and Chef de Partie/Sous Chef in maintaining high standards of hygiene, food, and service. You will be responsible for undertaking specific functions of the pastry department, including stock control, waste management, and cost control.

Key Responsibilities
  • Support the CDP in maintaining stock control, ensuring that sections stock levels and production are in line with business levels.
  • Be environmentally conscious and work towards a low waste operation.
  • Contribute to the effective management of costs, with a focus on zero waste.
  • Work on a rota basis based on hotel, outlet, and event hours of operation.
  • Ensure that you are aware of and able to advise employees on the correct policies and procedures.
  • Participate in the service in all kitchen outlets as business demands.
  • Communicate effectively with supervisors if there is a need for overtime on the section.
  • Work with, coach, and support team members on the section.
  • Communicate effectively and positively with all supervisors, HODs, chefs, and supporting departments to meet the needs of the operation.
  • Ensure correct storage and labeling of foodstuffs, equipment, and dry goods in all kitchen areas.
  • Receive daily product, ensuring correct stock rotation and storage of food and kitchen items.
  • Check cleanliness, working condition, and safety of all equipment used in the kitchen.
  • Take corrective action if any equipment does not meet standards.
  • Maintain equipment via correct channels.
Requirements
  • Excellent leadership skills, creating a positive kitchen culture with strong values.
  • Previous relevant experience as Demi Chef de Partie in a luxury/Michelin star/5-star environment.
  • A creative approach to the production of high-quality food.
  • Ability and availability to work all shift patterns in a 7-day, 24-hour operation, including weekends, evenings, early mornings, holidays, and overnight shifts.
