Overview:

The primary objective is to oversee the seamless operation of all storage areas and cellars, ensuring accountability for inventory management, office supplies, and Food and Beverage items including crockery, silverware, china, and glassware.

Key Responsibilities:

Hospitality & Service

To provide stock to various departments based on their requests, ensuring all inventory is accurately recorded in the designated Stock Ledger while maintaining a flexible stock level that aligns with business demands.

To maintain a professional appearance at all times while on duty, adhering to the prescribed uniform standards and upholding the highest personal hygiene practices.

To represent the Hotel positively, acting as a Sales Person and promoting its image consistently.

To ensure that all storage areas and cellars are kept in a clean and orderly condition at all times.

To understand and comply with the legal Licensing Laws relevant to the Bar operations.

Financial Awareness

To assist the Food and Beverage Manager in managing and controlling the Liquor Cellar on a daily basis.

To document and report any damages occurring within the Cellar.

To ensure adherence to company purchasing protocols and seek opportunities to minimize costs.

Communication

To inform departments when items are out of stock or to notify them of any changes in product availability.

To coordinate with external stock auditors as required.

Health and Safety

To be knowledgeable of and comply with the Hotel's Health and Safety policies.

To execute fire alarm procedures pertinent to the position and area of responsibility.

To perform all duties safely, prioritizing the health, safety, and welfare of oneself, colleagues, guests, and other individuals on Hotel premises.

Planning and Organising

To ensure all storage areas maintain adequate stock levels in anticipation of future business needs and to keep 'actual' stock levels aligned with the predetermined amounts set by the Food and Beverage Manager.

To verify that each delivery matches the order placed, ensuring no deliveries are signed for without prior inspection. Any discrepancies should be documented on the delivery note.

To manage stock ordering, collaborating with the Food and Beverage Manager and the Hotel Accountant, while consistently following the Company's purchasing procedures.

To oversee all Stock Invoices, ensuring compliance with the Company's purchasing protocols.

To document and report any breakages occurring in the Cellar.

To conduct stocktaking in accordance with Company policy and generate the necessary statistics, records, and reports.

To assist in managing and updating the Wine and Digestive Lists, adjusting prices, wines, and vintages in collaboration with the Food and Beverage Manager.

To support the Food and Beverage Manager with the following stocktakes:

  1. Internal Liquor Stocktake
  2. External Monthly Liquor Stocktake
  3. Monthly Stationery Stocktake
  4. Crockery, Silver, and Glassware Stocktakes
