The primary objective is to oversee the seamless operation of all storage areas and wine cellars, managing inventory of beverages, supplies, and dining ware.

Key Responsibilities:

Hospitality & Service

Responsible for supplying stock to various departments based on their requests, ensuring all inventory is accurately recorded in the designated Stock Ledger, while maintaining a flexible inventory level aligned with business demands.

Maintain a professional appearance at all times while on duty, adhering to the prescribed uniform standards. Personal hygiene must be prioritized to the highest degree.

Actively promote the hotel's image by embodying exemplary service standards.

Ensure that all storage areas and cellars are consistently kept clean and organized.

Comprehend and comply with the relevant Licensing Laws pertaining to beverage service.

Financial Awareness

Assist the Food and Beverage Manager in the oversight and daily management of the Liquor Cellar.

Document and report any breakages occurring within the Cellar.

Ensure adherence to company purchasing protocols at all times while identifying opportunities to minimize costs.

Communication

Notify departments when items are out of stock or inform them of any changes in product availability.

Coordinate with external stock auditors as required.

Health and Safety

Be knowledgeable of and comply with the hotel's Health and Safety policies.

Execute fire alarm procedures relevant to the role and area of responsibility.

Perform all duties safely, prioritizing the health, safety, and welfare of oneself, colleagues, guests, and other individuals on hotel premises.

Planning and Organizing

Ensure that all storage areas maintain adequate stock levels in anticipation of future business needs, while keeping actual stock levels aligned with the predetermined amounts set by the Food and Beverage Manager.

Verify that each delivery matches the order placed; no deliveries should be accepted without prior inspection. Any discrepancies must be documented on the delivery note.

Manage stock ordering in collaboration with the Food and Beverage Manager and the Hotel Accountant, consistently following the company's purchasing procedures.

Record all stock invoices in accordance with company policies.

Conduct stocktaking in alignment with company guidelines, producing the necessary statistics, records, and reports.

Assist in managing and updating the Wine and Digestive Lists, adjusting prices, wines, and vintages as directed by the Food and Beverage Manager.

Support the Food and Beverage Manager with the following stocktakes:

  1. Internal Liquor Stocktake
  2. External Monthly Liquor Stocktake
  3. Monthly Stationery Stocktake
  4. Crockery, Silverware, and Glassware Stocktakes
