Job Summary: We are seeking a highly skilled and experienced Junior Sous Chef to join our team at Michels & Taylor. As a key member of our kitchen team, you will be responsible for assisting in leading a team of 15 team members and creating a positive work environment that promotes good employee morale and high levels of commitment and pride in the hotel.

Key Responsibilities:

  • Assist in leading a team of 15 team members and creating a team environment that promotes good employee morale and ensures a high level of commitment and pride in the hotel.
  • Develop and implement creative menu changes and new dishes that meet the high standards of our hotel.
  • Assist in ensuring the profitability of food operations and Gross Profit management, including conducting regular food stock-takes.
  • Maintain and improve departmental operating standards, including product and menu development and specifications.
  • Monitor and control payroll costs for the department by allocating labor resources in line with forecasted business levels.
  • Evaluate and act promptly on customer feedback to achieve positive and consistent results.
  • Maintain exceptionally high cleanliness standards in both outlets.
  • Mentor team members in the kitchen department who are undertaking an apprenticeship.
  • Ensure compliance with statutory and Company requirements for Health and Safety, Food Safety, Risk Assessment, Licensing Laws, and other legislation.

Requirements:

  • Proven experience as a Junior Sous Chef or similar role in a high-end hotel or restaurant.
  • Strong leadership and team management skills.
  • Excellent culinary skills and knowledge of menu development and food safety.
  • Ability to work under pressure and maintain high standards in a fast-paced environment.
  • Strong communication and interpersonal skills.
