Gretna Green are looking to recruit a **Food and Beverage Manager** who is passionate about providing first class customer service to exceed guests’ expectations and put our guests at the heart of everything they do. Be responsiblefor the overall profitability of the Hotel Restaurant and Bar so that they perform efficiently and effectively.

**Main Duties and Responsibilities**
- Supervise the function of the Restaurant, Function Bars and Hotel Bar in respect of colleagues, facilities, sales and costs to ensure maximum departmental profit is achieved.
- Control and analyse, on an on-going basis, to optimise the following:

- product and service quality levels
- guest satisfaction
- merchandising and marketing
- operating costs
- hygiene
- Ensure that regular stocktaking is carried out and action is taken in response to results.
- Determine menus, wine lists and price lists, in line with company standards.
- Plan and carry out the food and beverage promotion schedule.
- Attend hotel and company meetings.
- Hold relevant meetings for food and beverage department.
- Be aware of company and hotel policies.
- Be aware of trends, systems, practices and equipment in preparation and service within the industry.
- Have full product knowledge of the facilities offered at the hotel.
- Report issues of maintenance and faulty appliances to the Maintenance Manager to ensure prompt repair
- Promote and represent the work and ethos of Gretna Green Ltd and always follow its policies and procedures
- Take reasonable care for the health and safety of themselves and others who may be affected by their acts or omissions at work
- Implementing any strategic changes to selling and communicating to the team.
- Be involved with HR and the recruitment of all food and beverage colleagues.
- Ensure that every member of the F&B Service Team receives the required training and assessment to fulfil all legislative and company requirements and to develop the skills and capability required in their job and to ensure this training and assessmentsare recorded.
- Actively encourage and manage the development of the team through appraisal, review meetings, etc. to deliver the business objectives.
- Ensure that there are appropriate professional standards of behaviour in the department.
- Monitor the standards of work, working practices, productivity, and standards of customer care of the members of the department.
- Ensure that the members of the department are kept informed of the departmental / hotel / company targets and performance.
- Promote teamwork within the department and with other departments.
- Actively engage in your own personal development to benefit the business and improve your personal skills.

**Key Skills/Experience**
- An excellent communicator and motivator to inspire your team to high performance.
- Previous relevant hotel experience in a supervisory/management role is essential
- Strong communication and leadership skills, as well as first class customer service skills.
- Experience of IT Skills Word/Excel and Rezlynx would be advantageous

Hours will be full-time and a minimum of 40, salary will be dependent on experience
