THE OPPORTUNITY
We are looking for an experienced Sous Chef to join the newly opened property Holiday Inn Blackpool. Reporting to the Executive Head Chef, you will be responsible for managing all aspects of Marco's New York Italian Restaurant , inspired by Marco Pierre White alongside the other F&B outlets within the property. Our objective is for Marco's to be the destination restaurant of choice within the Blackpool market
As Sous Chef, you will have opportunity to showcase your culinary skills within a world famous chef's kitchen, whilst working alongside an equally dedicated team committed to excellence.
This brand-new four-star hotel is part of a wider regeneration project for Blackpool including retail units and improved public transport links, with a new tram terminal, all within the Talbot Gateway central business district. The property boasts 144 bedrooms, 3 meeting rooms and well renowned restaurant Marco Pierre White New York Italian, with independent street access.
Duties and responsibilities:
  • Culinary Leadership: Manage all aspects of the Marco Pierre White menu, ensuring the consistent production of high-quality food across all food outlets, by living and breathing the dish specifications. Working closely with the Executive Head Chef, you will lead the kitchen brigade by setting high culinary standards and fostering a culture of excellence.

  • Team Management: Lead the kitchen brigade to maintain a well organised and motivated team, fostering a positive work environment. Create collaborative working relationships across other departments of the hotel operation.

  • Quality Control: Maintain strict quality control measures in food preparation, presentation, and service to consistently exceed guest expectations. Continuously incorporate guest feedback received to ensure the kitchen brigade meet the expected standards set by the Executive Head Chef and the Marco Pierre White brand. Support brand standards with training and continuous professional development opportunities.

  • Cost Control: Manage kitchen expenses and inventory, including food and labour costs, to ensure budget compliance while maintaining quality. Controlling cost without compromising standards to manage cost of sales, and effective GP%.

  • Health and Safety: Uphold the highest standards of food safety and sanitation, complying with all relevant health and safety regulations.

  • Innovation: Drive innovation by introducing new cooking techniques, concepts, and seasonal dishes to keep the menu fresh and exciting. Promote environmental awareness and implement sustainable practices with the kitchen where possible.

WHAT WE NEED FROM YOU
  • Proven experience as a Sous Chef in a similar branded operation within the hospitality industry.
  • Exceptional culinary skills with a strong understanding of various cooking methods, ingredients, equipment and procedures.
  • A keen eye for detail and a commitment to producing exceptional dishes.
  • Strong leadership and team management abilities.
  • A thorough understanding of health & safety regulations and food safety standards.
  • A determination to continually improve and compete at the highest level of culinary excellence.
  • A flexible approach to working hours, which will involve working evenings, weekends and public holidays to meet the needs of our guests.
