Lead a Culinary Experience - Restaurant Manager Wanted

Seaton House, in partnership with the renowned Ondine, Edinburgh by Roy Brett, is set to redefine dining in St Andrews with our upcoming 5-star luxury hotel, opening in February 2025. We are seeking a seasoned Restaurant Manager to lead Ondine at Seaton House, overseeing a team dedicated to culinary excellence and exceptional service.

As the Restaurant Manager, you will work under the guidance of Roy Brett to establish Ondine at Seaton House as a first class dining destination. This role demands a leader who can maintain high standards of service and quality, inspired by Ondine's celebrated reputation in Edinburgh.

What You'll Do:

  • Manage daily operations of the restaurant, ensuring seamless service and guest satisfaction.
  • Lead, train, and inspire a team of culinary and service professionals.
  • Collaborate with Roy Brett to uphold the culinary vision and standards of Ondine.
  • Develop marketing and business strategies to enhance the dining experience and increase profitability.
  • Manage reservations, guest relations, and accommodate special requests with the highest level of professionalism.
  • Ensure compliance with all health, safety, and licensing regulations.

What We're Looking For:

  • Proven experience as a Restaurant Manager in a high-end or potentially rosetted restaurant.
  • Deep passion for seafood cuisine and commitment to sustainability and quality.
  • Excellent leadership, team management, and staff training skills.
  • Strong business acumen with experience in budgeting, forecasting, and restaurant marketing.
  • Outstanding customer service skills and the ability to handle high-pressure situations.
  • Familiarity with restaurant management software and Point of Sale systems.
